Lentils

Lentils are a convenient, inexpensive and healthy alternative to animal protein and high in fibre, as well as providing some iron and folate.

I literally fry some onion and garlic and add these along with red lentils to canned tomatoes and a little low salt vegetable stock and boil until soft.


Make a big batch and serve in numerous ways over a few days or freeze and use later.

You could serve on wholegrain toast (like baked beans!), on an open or folded wholemeal wrap, pour over some chicken breasts or white fish and bake in the oven at 180oC fan for 25 mins (time depending on breast or fillet size)…the list is endless!

What is more lentils make a great weaning food and perfect introduction to protein for babies too; blended to the consistency desired. Whack in some diced carrot when boiling for extra flavour and goodness too.
